Chocolate-Banana Protein Muffins
1 1/4 cup whole wheat or unbleached flour
1/2 cup rolled oats
1 tsp baking soda
1/4 tsp salt
3 bananas, smashed
1/4 cup honey (optional)
1 tbs vanilla extract
1 tbs coconut oil
1/2 cup non-fat plain Greek yogurt
2 tbs unsweetened almond milk
1/2 cup semi sweetened chocolate chips
Preheat oven to 300 degrees F and spray 12 cup muffin tin with cooking spray
1. Mix together dry ingredients in a medium bowl and set aside.
2. Mix together wet ingredients.
3. Mix in wet ingredients with dry ingredients and stir until just combined. Do not overmix.
4. Divide evenly into muffin tin and bake at 350 degrees F for 20-25 minutes or until toothpick comes out clean!
